Recipe for cauliflower medley with black-eyed peas and rice
In Ayurveda, we seek balance. And if we want to feel balance within, we need to surround ourselves with balance as well. In our food, this means we want to create meals that have the balance of all 6 tastes that exist in nature.
The 6 tastes of Ayurveda:
- Sweet – like root vegetables and whole grains
- Sour – citrus fruit or sumac
- Salty – salt or seaweeds
- Bitter – leafy greens
- Pungent – ginger or hing
- Astringent – beans and spices
This delicious dish has multiple components, but it comes together easily to create a balanced bowl that will leave you feeling nourished and satisfied. Be sure to get the black eyed peas soaking, and use a pressure cooker to make this dish super easy.

Cauliflower medley with black-eyed peas and rice

Serves: 4 servings
Ingredients
Rice and Quinoa
- 1 cup white rice
- ¼ cup quinoa
- 1-2 tbsp ghee
- ¼ tsp salt
- ¼ tsp garcinia powder
- 3 cups water
Black Eyed Peas
- ¾ cup black eyed peas
- 1 tbsp sesame oil
- ¼ tsp salt
- ½ tsp grated fresh turmeric or ½ tsp turmeric powder
- ¾ tsp grated fresh ginger
- ½ tsp mustard seeds
- ½ tsp fennel seeds
- ½ tsp ground cumin
- 2 cups water
Cauliflower
- 2 ½ cups cauliflower, cut into bite sized pieces
- 1 tbsp ghee
- ¼ tsp salt
- ½ tsp cumin seeds
- ½ tsp rosemary
- ¼ cup water
Spinach Sauce
- 2 cups spinach
- Handful fresh parsley
- ¼ cup sunflower seeds
- Juice from ½ lime or lemon
- 1 tbsp sesame oil
- ¼ tsp salt
Instructions
Rice and Quinoa
- Combine all ingredients in a pressure cooker and cook for 15 minutes.
- Alternatively, you could combine the ingredients in a rice cooker or cook on stovetop.
Black Eyed Peas
- Combine oil and spices to a pressure cooker or stovetop and allow the oil to heat up until the spices start to dance and become fragrant.
- Add black eyed peas and water, cooking on high pressure for 35 minutes. You can boil on the stove for about 40 minutes - be sure that the black eyed peas are pre-soaked if you’re going to use this method.
Cauliflower
- Combine oil and spices in a frying pan. Heat until the spices start to dance and become fragrant.
- Add cauliflower and stir to coat with oil and spices.
- Add water and cover, cooking on low heat until the cauliflower softens.
Spinach Sauce
- Combine all ingredients in a blender and blend.
Putting it together
- You can serve all 4 components separately, mix them all together before serving, or even choose to mix the spinach sauce into the rice. Enjoy!
